For our founder, Jeff Oliveri, Tavola Nostra has been a lifelong dream. Leaving behind a successful 25-year corporate career, he set out to bring the flavors and heritage of his Silican roots to San Diego.

At the heart of Tavola Nostra’s success lies our commitment to authenticity, showcased through our signature dish — Pinsa Romana. This ancient style Roman pizza, is a 12 inch oval shape pizza made with a blend of three flours that are imported from Italy.

What sets Tavola Nostra’s Pinsa Romana apart is the dedication to a slow fermentation process. With 80% hydration, low yeast, and an impressive 48-96 hours of fermentation, each Pinsa Romana achieves the perfect balance of flavors and textures. The result is an airy and crispy crust that pays homage to the ancient Roman tradition.
